Arctic Char

This dish. So colorful. So healthy. So easy. For the Paleo and pescatarian in you.


  1. 1/2 a pound of asparagus
  2. A handful of tomatoes
  3. Lemon
  4. 1/2 pound of arctic char
  5. Red, White or Yellow onions
  6. Olive Oil
  7. Salt and pepper to taste


  1. Heat oven to 350 degrees Fahrenheit
  2. Trim asparagus and rinse
  3. Cut tomatoes in half and rinse
  4. Pour 1-2 tablespoons of olive oil into bottom of baking pan
  5. Cut asparagus in half
  6. Mince onions
  7.  Layer the asparagus and onions and tomatoes on the bottom of the pan
  8. Slice lemon and squeeze lemon juice generously over the tomatoes, asparagus and onions
  9. Place the Arctic Char on top of the vegetables, skin side down
  10. Add some more olive oil, generously
  11. Add some lemon juice, generously
  12. Sprinkle with salt and pepper, generously
  13. Place the fish in oven for ten minutes
  14. Fish is done when pink all the way through

This is one of my favorite dishes, because it is quick, healthy and easy to make. It makes a great dish for a weeknight dinner.
